Pristine: Organic grains fermented, sprouted, or soaked in an an acidic liquid in order to minimize enzyme inhibitors and phytic acid. Ancient grains that are home ground and used within three days of grinding. Organic or wild rice. When purchasing brown rice, choose smaller packages that are well sealed to prevent rancidity.
Clean: Organic, home ground hybrid/modern wheat. Organic unbleached/unbromated white or whole wheat flour from ancient or hybrid/modern grains, organic sprouted flour (Freshness is important for all whole grains that have been commercially ground since whole wheat flour does go rancid). Avoid: Conventional grains of any kind. Flours, even organic, that have synthetic vitamins added such as folic acid. Flours that have been bleached or bromated. All soy flour. All puffed grain products such as rice cakes.
